Healthy Baked Potato Soup Recipe

Serve this rich and creamy potato soup as an appetizer to a winter dinner party or alongside a big salad for lunch. It is full of flavor but light on calories with only 102 calories per cup.

Ingredients

    • 5 cloves garlic, minced
    • 1 1/2 cups celery, chopped
    • 1 cup leeks, sliced
    • 4 1/2 cups low sodium chicken broth
    • 6 large baking potatoes, peeled and chopped
    • Black pepper

Preparation

    • Over moderate high heat, sauté garlic, celery and leeks together in a large pot lightly coated with nonstick cooking spray. Add chicken broth and potatoes, cover pot, then bring to a boil over high heat. Reduce heat and simmer, uncovered, stirring occasionally, until potatoes are very tender, 15 to 20 minutes. Remove from heat and puree mixture in a food processor or blender. Serve immediately.
