Chocolate Chip Cookie Recipe

Heart Healthy Recipe Diabetes Recipe
These chocolate chip cookies look and taste just like Grandma's, but have less calories and less fat. Serve with skim milk.

Ingredients

    • 1/2 cup (1 stick) reduced-calorie margarine, softened
    • 1/2 cup brown sugar
    • 2 tsp Splenda®
    • 3 Tbsp water
    • 1 tsp vanilla extract
    • 1 1/4 cup all purpose flour
    • 1/2 cup flaxseed meal
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 package miniature milk chocolate chips
    • 1/2 cup walnuts, chopped

Preparation

    • Preheat oven to 375°.
    • In a large mixing bowl, cream together margarine, brown sugar and Splenda until smooth. Add water and vanilla. Stir in remaining ingredients with a spoon.
    • Place bowl in freezer for about 30 minutes.
    • Spritz cookie sheets with cooking spray. Drop cookie batter by rounded tablespoon onto baking sheets.
    • Bake for 10-12 minutes. Remove from oven. Let stand for two minutes. Transfer cookies to a wire rack to cool completely.
