Chocolate Sorbet Recipe

Heart Healthy Recipe Diabetes Recipe
This creamy chocolate sorbet tastes too rich to be healthy, but the dark chocolate makes it good for you. Serve this low fat dessert with homemade raspberry sauce.

Ingredients

    • 4 oz good quality dark chocolate bar
    • 2 cups water
    • 1 tsp sea salt
    • 1-1/4 cup sugar
    • 4-3/4 Tbsp Dutch process cocoa powder, sifted

Preparation

    • Ice cream maker required.
    • Chop chocolate finely and place in a bowl. Combine water, sea salt and sugar in a saucepan. Bring to a simmer over medium heat. In small doses, whisk cocoa powder into simmering liquid to obtain a smooth syrup. Pour hot liquid over chopped chocolate and allow to melt, whisking to incorporate. Strain into a clean container; cover with plastic wrap and chill thoroughly in the refrigerator.
    • The mixture may thicken slightly. Whisk mixture smooth and then freeze in an ice cream machine according to manufacturer's instructions. Transfer sorbet to a clean airtight container and freeze at least two hours in the coldest part of your freezer before serving.
