Heart Healthy Recipe Diabetes Recipe
Your farmer's market is brimming with heart healthy greens that make an easy side dish. When choosing kale, spinach or any greens, look for firm, deep-colored leaves and make sure you rinse them well.

Ingredients

    • 1 Tbsp extra virgin olive oil
    • 2-1/2 cups greens (such as kale, collard greens, spinach and Swiss chard) stems removed and cut into bite-sized pieces
    • 1/4 cup water
    • 2 tsp fresh lemon juice
    • 1/8 tsp unrefined sea salt
    • pinch fresh ground black pepper

Preparation

    • In a skillet, heat oil over medium-high heat. Add greens and water and cook, stirring occasionally, for about 1 minute, or until greens are wilted. Remove from heat. Add lemon juice, salt and black pepper and toss gently to combine.
