This chicken salad loses calories but not flavor with a creamy mix of low fat mayonnaise and fat free sour cream. Walnuts give this healthy chicken salad a good dose of omega-3 and a nice crunch.
Ingredients
- 4 skinless, boneless chicken breasts (4 oz each), baked
- 1/3 cup reduced-fat mayonnaise
- 2 Tbsp fat-free sour cream
- 2 tsp lemon juice
- 1/2 cup seedless red grapes, quartered
- 1/4 cup walnuts, chopped
- 1/2 cup chopped celery
- 2 green onions, chopped
- black pepper to taste
- lettuce leaves for garnish
Preparation
- With a knife, dice chicken breasts into bite-sized pieces. In a large bowl, combine chicken, mayonnaise, sour cream, lemon juice, grapes, walnuts, onions and black pepper. Toss gently. Serve on a bed of lettuce.
