Apple Cabbage Slaw Recipe

Next time you have a burger, try this crispy apple cabbage slaw on the side instead of fries. This easy, low fat slaw is only 55 calories per serving versus 380 calories for a side of fries.

Ingredients

    • 1/2 cup reduced-fat mayonnaise
    • 3 Tbsp fresh lime juice
    • 1/8 tsp black pepper
    • 2 medium Granny Smith apples, peeled, cored and cut into thin strips
    • 1 small red cabbage, shredded
    • 1/2 cup chopped fresh cilantro leaves

Preparation

    • In a small bowl, combine mayonnaise, 2 tablespoons lime juice and black pepper until blended well. Set aside.
    • In a large bowl, toss apples with remaining 1 tablespoon lime juice. Add cabbage, cilantro and mayonnaise mixture and toss well to combine. Chill for at least 1 hour, covered.
